I made this rather nice looking soda bread for lunch today.
Ingredients:
170g strong white flour
85g malted flour
15g rye flour
70g wholemeal flour
5ml (1tsp) bicarbonate of soda
2.5ml (1/2 tsp) salt
290ml buttermilk
milk, if necessary
Mix the dry ingredients, add the buttermilk and knead for about 6-8 minutes. Add a tablespoon or two of milk if the dough feels dry. I aim for a fairly wet dough - mine tend to be on the border of sticky.
Form a ball and let the dough stand covered for about 5-10 minutes.
Form a round loaf by flattening the ball until it is relatively flat on top. Dust with flour, then score deeply. The loaf needs to be scored through half its depth to prevent the slides splitting.
Bake at 200 C for about 30 minutes. Use a baking stone if you have one, otherwise back on a sheet.
